Pancakes

Our tradition for BIRTHDAYS.  I usually DOUBLE this batch, fry all of them up and freeze for quick breakfasts later!  You can microwave them or toast them, whichever is easier!



1 c flour
2 T white sugar
2 T baking powder
1 t salt
1 egg, beaten
1 c milk
2 T vegetable oil

In a big bowl, mix flour, sugar, baking powder and salt.  Make a well in the center.  Pour in milk, egg & oil.  Mix until smooth.  Heat griddle or electric skillet over medium high heat.  Pour or scoop the batter onto the griddle.  Brown on both sides and serve hot.

Ham Sandwiches

HUGE family tradition and favorite at our house growing up!  Oh the memories I have of these yummy sandwiches.  Often on a Sunday right after morning church service.  My mom woud always serve them with Pringles and cottage cheese (ahem, might I add, it was Anderson Erickson, the best there is).  Hope your family enjoys them as much as we do!






1 package hamburger buns (8 ct)
1 lb sliced deli ham
8 slices American cheese
foil

Lay the hamburger buns out on a counter with top and bottom separated.  Evenly divide ham over the bottoms of the bun.  Put one slice of American Cheese on the tops of the buns, then put all the tops back on to make a sandwich.  Wrap each sandwich in a piece of foil.  Bake in the oven at 350 for about 15 minutes giving it enough time for the cheese to melt.

Deviled Eggs



1 dozen eggs, hard boiled
1 c Miracle Whip/mayo (more or less depending on the consistency you like)
2 T yellow mustard
paparika

Start out with room temperature water in a large pan.  Put raw eggs, whole, gently in the water.  Careful not to crack the shells.  Turn burner on HIGH and bring to a rolling boil.  Continue boiling for 10 minutes, then just turn the burner off.  Don't remove from the burner and let sit at least another 10 minutes.  Then dump the hot water out and cool them in cool water if you need immediately.  Peel cooled eggs.  Cut in half and put the yokes into a separate bowl. Squish the yokes with a fork so they are all broken apart.  Add Miracle Whip and mustard until well blended.  Fill each egg white with a scoop of the yolk mixture.  Sprinkle with paprika, mainly for look.  KEEP REFRIGERATED!

Diners, Drive-ins, and Dives #1: Joe's Farm Grill

 #1 on our family adventure list! :)


Our first venture was to a place in Gilbert, AZ.  We went on a Sunday after church, about two hours before closing time, a PERFECT time to try this cool place out!  Our evening was nothing short of perfect!  So great!

This used to be the farm house that they lived in back before it was an establishment!


This establishment was CLEAN, immaculately, and the staff was alright.  Not actually the best I've had, but nothing bad happened.  It, of course, was quite exciting for my dear farm boy (as you wish), as it sits in the middle of 15 acres or so of farmland.  These acres are FILLED with the fresh produce they use day in and day out on their menu items!

What did we eat!?  I'll let the pictures do the talking! :)

condiment/drink area is from people that don't clean up their messes!?
HUGE pet peeve of mine.  This was SPOTLESS!  And below the 
condiments was a constant flow of water washing down the "leftovers"
that people spilled.  Genius! :)

Something NEW!!! :) Something FUN!

So, I'm a little crazy when it comes to the Food Network Channel! :)  Who is with me!? :)  C'mon, fess up, you ARE just as crazy as I! :)  Even my kids are almost as crazy about the FNC as they are cartoons! :)  No joke!  Anyways, one of four families' favorite shows on there is a show called Diners, Drive-Ins & Dives!  Anyone watched it!?  Guy Fieri (a famous chef) goes around the US and tries out these "hole in the wall" places that are just "over the top" on most food charts for places to go.  Well, we decided to take some family adventures and go try out the 10 that are featured here in the Phoenix vicinity! :)  And YOU, my blog readers, get the privilege of seeing first hand from ME, my first impressions, my thoughts, etc of each one that we try out!  Now, I am not going to post about all 10 on the same day, you will have to keep coming back for more if you're interested, and especially for those living right here in the area, you'll have to try some of these places out, they are.................AMAZING!  We are having SO MUCH FUN trying them all out! :)  So, here's to hoping you'll travel this adventure with us! :)  My first blog will be tomorrow!  Just getting you all ready! :)

Scotcharoo Bars






1 c light corn syrup
1 c white sugar
1 1/2 c peanut butter
6 c crisp rice cereal
1/2 c butterscotch chips
1/2 c semisweet chocolate chips

Butter a 9x9 baking pan generously with butter.  Set aside.  Mix together corn syrup, sugar and peanut butter.  Cook over medium heat, stirring until peanut butter melts.  If you let it cook too long your bars will be crunchier, so don't overcook.  Just until sugar is dissolved and peanut butter is melted.  Remove from heat, and stir in rice krispies.  Transfer mixture into the buttered pan and pat it down.  In a small bowl, microwave the butterscotch and chocolate chips until melted.  I start out doing 30 seconds at a time until they are completely melted otherwise they may burn.  Spread over the top and let the bars cool.  Cut into squares.  I prefer my bars chilled, but not easy to cut, just warning you! :)  Let them sit out of the fridge about 5 minutes or so before trying to cut and it's much simpler!

Note:  This can also be done in a 9x13 pan.  You will have a thinner bar and I usually do 3/4 c each kind of chip as 1/2 c each is not enough for that large of area.  Everything else stays the same.

Creamy Cucumber Salad

Unbelievably REFRESHING summer salad!  LOVE IT!  I think you will too!


4 medium size cucumbers, peeled and sliced
1 small red onion, chopped
1 c Miracle Whip/mayo
1/4 c sugar
4 t apple cider vinegar

Peel & slice the cucumbers into a bowl.  Chop the onion and put in with the cucumbers.  In a separate bowl, mix together the Miracle Whip, sugar and vinegar until well blended.  Pour over the top of the cucumber mix and mix until everything is coated.  Can be served immediately, however, chilled is nice! :)

Cheesy Potatoes

These are the potatoes I grew up on at home!  OH MAN are they good!  These go well with just about anything! :)



5 large russet potatoes
1 can Cream of Chicken soup
16 oz sour cream
2 c Cheddar Cheese, shredded

Peel potatoes and shred into a bowl.  Mix in the soup and sour cream until everything is well mixed.  Put into a 9x9 baking dish.  Top with the cheese.  Bake at 350 for 90 minutes.

BBQ Pork Chops

 Right out of the oven!

1 cup ketchup
1/4 cup vinegar
1 T. mustard
1 1/2 T. Worcestershire sauce
1/2 cup water
2 T. brown sugar
salt and pepper to taste
8 pork chops

Combine all ingredients in a small pan. Simmer 5 minutes over low heat. Put meat into a casserole dish (9x13 or smaller if less meat). Pour the warm sauce over the meat and cover tightly, either with a lid to fit or foil. Bake at 325 for 1 1/2 to 2 hours.

Note:  This can also be frozen ahead.  Make the sauce, let cool, then pour over RAW pork chops and freeze.  Unthaw the day before and throw everything into your 9x13 and bake as directed.
